I am sharing one of my family’s most prized possessions with you today. My mother’s No Bake Cookie recipe! You know how some ladies are known in their community for making really good pies? Well that’s my mom, except with these cookies. From my high school friends to the pastor at our church, everyone raves about her cookies! They have even sold at our church’s dessert auction for a couple hundred dollars! $$
Thankfully she has shared her coveted recipe with me and also the little tricks she does that aren’t written down on the paper! If you have made No Bake Cookies before then you know how finicky they can be. Even the humidity in the air can make a difference in how they turn out!

I LOVE how quick and easy they are to make! They literally take about 10 minutes! Some ovens take that long to pre-heat for regular cookies. But let’s be honest, I love how they taste even more and so does everyone else! These are so moist but still set up just right!
It is a given that I bring these to any friends’ gathering that we attend and if we host a game night then they’re all but expected. I don’t mind a bit thought because I can eat 1 or 2… or 3 but then the rest are gobbled up in minutes, saving me from eating them all!
Master these cookies and be prepared for them to be a regular request… or demand! Ha!

INGREDIENTS
Here is what you will need:
- 1 stick, unsalted butter
- 2 cups of sugar (+ a little bit more*)
- ¼ cup of unsweetened cocoa (+ a tad more*) (Hershey’s or Nestle is best)
- ½ cup of milk (I use 2%)
- 2 tsp. of vanilla extract
- ½ cup of smooth peanut butter (+ a little bit more*)
- 3 cups of 1-Minute Oatmeal (Don’t use Old Fashion Oatmeal)
The “+ a little bit more” measurements are exactly that and how my mother describes it! You will have to play around with what your little bit more is but I would quantify it as such: 1-2 Tbsp. more of sugar, 1-2 tsp. more of cocoa and 1 heaping tsp. more of PB!
INSTRUCTIONS
First, melt the stick of butter in a saucepan over medium heat.

Remove pan from heat and add the sugar and cocoa. Mix together then add the milk. Stir until it is all combined and smooth.

Return to the burner still on medium heat. Stir occasionally until mixture comes to a “rolling” boil. This will take about 3-4 minutes. (A rolling boil is pictured below. It is when the whole top surface area is bubbling up.)

Let boil for exactly 1 minute. Remove from stovetop.
Add the vanilla. After you add the vanilla, it should bubble up a little.

Add the peanut butter and mix until PB is mixed in smoothly.
Add the oatmeal.
Spoon onto parchment paper with a tablespoon and let the cookies set up.

As soon as the cookies are set up, put them in an air tight container to keep them moist unless you are serving them soon.
TIPS
Get all your ingredients and measurement tools out before you start cooking.
I usually sit the hot mixture on a trivet next to the parchment paper and have my vanilla, PB and oatmeal beside it ready to go. This prevents the mixture from setting up in the saucepan if you take too long.
If your cookies turn out too dry then try boiling for 10 seconds less the next time. If they turn out too moist and don’t set up, then boil for 10 seconds longer.
Practice. Practice. We all live in different areas that will affect the cookies so tweak the recipe as needed for you!
