It’s Friday evening after work and you forgot that you were supposed to bring a dish to a cookout that evening! By the time you go to the grocery store and get home, you aren’t going to have time to bake or cook anything! As busy moms we all like to have quick, staple recipes in our lineup that we can whip together in a moment’s notice. This recipe only takes a handful of ingredients and is quick, healthy and very fresh tasting! It is my go to dish when I’m in a pinch! The perfect summer dish especially when you can use home grown tomatoes, corn and/or onions! Yummola!

This recipe is also very versatile! I have taken it to cookouts with tortilla chips as an appetizer dip, I have used it as a topping on my taco salads and I have also eaten it by itself for lunch or a snack! My husband and step daughter aren’t a fan of tomatoes or avocados so more for me BUT, get this, both of my twin girlies LOVE this dish! I try really to make sure my girls are eating healthy, nutritious foods and this recipe knocks it out of the park for all! BONUS!
Now let’s get to chopping! Here’s what you will need:
1 can of corn, drained
1/2-1 can of black beans, drained & rinsed
1-2 avocados, diced
2 tomatoes, diced
1/2 red onion, diced
2 Tbsp. of fresh cilantro, minced
Juice of 1 lime
1 jalapeño, diced (if you like some heat)
Salt and pepper to taste
Prep Time: 10 minutes Cook time: ZERO!

After you mix all the ingredients, you can serve immediately or if you have time you can make it before hand to let all the natural juices mix and marinate together!

You can add or limit each ingredient to your own liking as well. Personally I am a wimp when it comes to spicy things, therefore I don’t put any jalapeños in mine! I love the fresh taste of the tomatoes, cilantro and lime juice, so I add a little extra of those ingredients. (Or you can buy the cilantro and forget to add to your salad, like I did…) You can also experiment with some taco seasoning or chili powder!
